Breakfast Muffins – Banana Hemp & Oats

Great Breakfast muffins, packed full of protein, essential fatty acids and slow-release energy. Kids love them too!
Hemp North
Ingredients:
100g of oats
50g of hemp hearts
1 large ripe banana
2 medium eggs
pinch of baking powder
2 tablespoons of flour
a teaspoon of cinnamon powder
a good grind of nutmeg
Method:
This will make 6 nice breakfast muffins, if you want to make 12 just double the recipe. We love the natural sweetness from the banana and hemp hearts, but if you have a sweet tooth you can add some sugar to this mix.
- Pre heat oven to 18o C
- Put dry ingredients in a mixing bowl (Oats and Hemp)
- Mashup banana in a small bowl
- Add eggs to banana to make a wet mix
- Mix dry and wet ingredients together
- Don’t forget to add some cinnamon and nutmeg for a bit of added flavour
- Check Consistency, if there’s not enough banana then you might need to add a splash of milk, but mine was a bit wet, so I added 2 tablespoons of flour and a pinch of baking powder to make it rise a bit.
- Add a bit of oil of butter to 6 compartments of the muffin tin (or cake liners if you prefer)
- Scoop the cake mix equally into 6 (or 12 compartmnets)
- Bake for 10-15 minutes, they should rise a bit and are done when they have a golden colour on the outside.
- Enjoy!
These should keep happily for a few days, or you can batch bake them and freeze a few, Kids love them and they are a healthy breakfast full of nutrients and slow-release energy from all the ingredients.
