Hemp and Wild Garlic Pesto

This amazing pesto is great as a dip or a pasta sauce. I'm sure you can use it in other cooking or as an added flavour for other dishes or sandwiches.

Ingredients:

4 cups loosely packed wild garlic,

½ cup hemp hearts,

½ cup Parmesan (or Gran Padano cheese)

2 cloves garlic,

salt to taste.

squeeze of lemon juice

4-6 tablespoons of olive oil

 

 

Method:

After spending a leisurely afternoon picking the wild garlic (time not included)

It’s a very simple process of popping it all together into a blender and whizzing it up.

To make the mix a bit softer for dipping you can add more lemon juice or oil.
