Ingredients:

1/2 cup hemp oil

2 tablespoons of red wine vinegar

1/2 cup finely chopped parsley

3-4 cloves of garlic, finely chopped

2 small red chillies or 1 red chilli, deseeded and finely chopped

3/4 teaspoons of dried oregano

1 teaspoon of salt

1/2 teaspoon of pepper

Method:

1. Grab a bowl and mix all the ingredients together. Cover in clingfilm and allow the mixture to sit for 5 -10 minutes to release all the flavours into the oil before using.

2. Grab a spoon and baste your cauliflower while grilling or barbecuing. You can also use this sauce as a marinade.

3. If used as a marinating prepare the chimichurri 24 hours before to let those flavours envelop the cauliflower. Then cook the marinated cauliflower as instructed.

4. Once your cauliflower is cooked add a few spoonfuls over it and serve.
