Hemp Ginger Bread Biscuits

Tasty Ginger Hemp Biscuits are perfect with a cup of tea or coffee and are great fun to make, while adding protein and fibre into your diet.

I found these biscuits fun to do with my daughter – you can get some icing mix if you want to jazz up the designs and add some features to it. I found that the shapes were fine, and my 2-year-old daughter loves them as a treat or reward! Little does she know that I’ve snuck in some healthy hemp flour, packed full of protein and fibre.

As they get baked quite hard these are great little biscuits to take out with you, not many crumbs and go amazing with a cup of tea or coffee!

They also last a long time if stored in an airtight container.

I feel they are a healthy treat even though there is lots of fat and sugar.. You can always try swapping the margarine for some hemp oil! For a much less saturated fat content.

Ingredients:

 

  • 150g of hemp flour
  • 200g plain flour, plus extra for dusting
  • 140g dairy-free margarine
  • 100g dark muscovado sugar
  • 3tbsp golden syrup
  • 1tsp bicarbonate of soda
  • 1tbsp ground ginger
  • 2tsp ground cinnamon

Method:

  • STEP 1

    Melt the margarine, sugar and syrup in a pan over a low heat, then transfer to a medium bowl and leave to cool slightly.

    Stir in the Hemp flour mix, then the bicarb, spices and a pinch of salt until it comes together into a smooth dough.

    Chill for 30 mins until firm.

  • STEP 2

    Heat the oven to 200C/180C fan/gas 6.

    Line two baking sheets with baking parchment.

    Roll the dough out on a lightly floured surface to a 5-10mm thickness.. I found that the best biscuits that came out were thicker.

    Stamp out as many gingerbread people or whatever shape cutters you have as you can, then re-roll the trimmings and continue until all the dough is used. I had fun with some modelling for the last bits.

    Put on the sheets and bake for 10-12 mins until darkened. As the hemp makes the mix quite dark green anyway just look out for any over-browning (Burning!).

    Leave to cool on the sheets for 10 mins, then transfer to wire racks to cool completely.

    Will keep in an airtight container for two weeks.
