These energy bars will be all you be eating this summer! With the combination of chocolate, hemp and raspberries, this is a treat you can't beat.

Indulge in the Irresistible Combination of Hemp, Nuts, and Raspberries: The star ingredient of these energy bars is hemp hearts, which are loaded with protein, healthy fats, and minerals. They provide a complete amino acid profile, supporting muscle recovery and overall wellness. Paired with a selection of nuts, such as hazelnuts, almonds, or walnuts, these bars offer a satisfying crunch and an extra dose of nourishment.

A Creamy Nut Butter Binding: Natural almond butter (or other nut butter alternatives) acts as the glue that holds the ingredients together. Its rich and creamy texture adds depth to the bars while providing a boost of healthy fats and a delightful nutty flavour. With a pinch of sea salt to enhance the taste, these bars strike the perfect balance between sweet and savoury.

Freeze-Dried Raspberries for a Burst of Flavor: The addition of freeze-dried raspberries elevates these energy bars to a whole new level. Bursting with vibrant colour and a tangy taste, they infuse a refreshing and fruity twist. Besides their delectable flavour, raspberries bring an array of health benefits, including antioxidants, vitamins, and fibre.

A Finishing Touch of Dark Chocolate: To add a touch of decadence, the energy bars are drizzled with dark chocolate. Opt for high-quality dark chocolate with a cacao content of at least 70%. Dark chocolate not only satisfies your sweet tooth but also offers antioxidant properties and potential mood-boosting benefits.

With every bite of these Hemp Seed Energy Bars With Raspberries, you’ll experience a harmonious blend of textures and flavours. From the nutty crunch to the tangy sweetness and the velvety chocolate, these bars are a delectable treat that will keep you fueled and satisfied throughout the day.

Whether you enjoy them as a pre-workout snack, a post-work pick-me-up, or a healthy indulgence anytime, these energy bars are a perfect choice. They are not only delicious but also provide a wholesome combination of ingredients, ensuring you stay nourished and energized on your wellness journey.

Ingredients:

100g hemp hearts, plus more for rolling

100 g of nuts of your choice (for example hazelnuts, almonds, walnuts)

1 tbsp of natural almond butter (or peanut butter, cashew butter, sunflower seed butter)

1 pinch of sea salt

8 g of freeze-dried raspberries, more to sprinkle

60 g dark chocolate, at least 70% of cacao

Method:

1. Add the dates to your high-speed blender or food processor and pulse until rough paste forms. Set aside.

2. Then chop the nuts and freeze-dried raspberries by hand or food processor.
Put all ingredients together in a food processor or mix well all the chopped and pureed ingredients with the remaining ingredients by hand.

3. When using a food processor or blender, quickly knead the dough with your hands after having combined everything. The warmth of the hands makes the ingredients blend together better.

4. Lay out a baking pan with baking paper and firmly press the dough in with your hands.

5. Melt the chocolate over a hot water bath and then spread it eavenly over the dough. Sprinkle with hemp seeds and freeze-dried raspberries and refrigerate for at least 1 hour to cool down.

6. Cut the mass into cubes or bars as you like. Stored in an air-tight container they will last for at least 1-2 weeks.
